Here at Jessica’s, our Chef loves to use local products in his menu as often as possible. Another of the local purveyors we use is Blue Ledge Farm in Leicester, Vermont. Blue Ledge is a first generation small goat farm which specializes in farmstead goat cheeses. Greg Bernhardt and Hannah Sessions started the farm in 2000. The couple met in Florence, Italy while studying art.
The young couple returned to the states and turned a 110 acre former Holstein dairy farm into their goat farm. Their stock consists of Alpine and La Mancha dairy goats. Each are breeds known for being high milk producers and the La Mancha is also known for having a high butter fat content to their milk which is perfect for cheese production. The farm has over 100 goats, milking 10 goats at one time with 80 total milked twice a day. The farm produces eight different varieties of goat cheese. These include Camembrie, Chevre, and Middlebury Blue.
Since starting the operation, the couple has received rave reviews for their cheeses. In 2008, Wine Spectator named their cheese one of “100 greatest cheeses in the world”. In 2013, Yankee Magazine named their Middlebury Blue “Editor’s Choice.” The farm was also featured in the November 2009 issue of Martha Stewart Magazine. Greg and Hannah have also teamed with the Vermont Land Trust to ensure their 110 acres will never be developed. They are constantly striving to become more efficient and sustainable all while trying to expand their business. In 2008 the couple built a cheese cave to better ripen their product.
